One Pot Wonder Thai Peanut Pasta
12 ounce linguine ( or your favourite pasta)
4 cups chicken stock
4 tsp minced garlic
1tbsp thick teriyaki sauce
1 tbsp soy sauce
1/2 tsp red pepper flakes ( or less for less heat)
2 tsp ground ginger
1 large carrot cut in 1/4 inch slices
1 red bell pepper cut in 1/4 slices
3 green onions sliced in half lengthwise and then in 2 inch pieces
1 cup roasted salted peanuts
2 HEAPING tbsp peanut butter ( possibly more like 1/2 cup….. whatever)
Add everything into pot and bring to a boil then let simmer on low for 10min stirring often! Once pasta is al dente and the liquid is almost all evaporated remove from heat. Add salt and pepper to taste.
Add fresh squeezed lime and cilantro.
I am not kidding around when I say this was one of the best things any of us in the Robertson family had ever eaten! YUM!
