You will never find me craving a store bought granola bar. They are not appeal to me at all, HOWEVER I do love homemade granola bars and have played around with a few recipes until I finally landed on the best one! I love a granola bar that has some crunch to it but is still a bit soft. I have made these bars probably 15 times and they turn out great everytime. Don’t be afraid to play around with your ingredients, these are hard to mess up!
First things first you need to toast 2 cups up of old fashioned oats, 1 cup of coconut unsweetened, 1 cup of wheat germ and 1 cup of slivered almonds in a 350 degree oven for about 10 min. Keep checking them as they toast so they don’t burn.
While the dry ingredients are toasting,in a small saucepan put 3 tbsp of butter, 1/4 cup of coconut sugar ( or brown sugar), 2/3 cup honey, 1tsp vanilla and 1/2 tsp salt. This will need to come to a boil then immediately remove off the stove.
Meanwhile chop up into small pieces 1/2 cup medjool dates pitted. Then add to a bowl the dates, 1 cup of dried blueberries or raisins, 1/2 cup chocolate chips and anything else you have laying around that looks tasty. Sometimes i do dried raspberries and raisins sometimes i do apricots and cherries, you could do anything really.
Then toss your dried toasted ingredients and dried fruit into a large bowl. Drizzle your liquid ingredients over top and mix well.
Dump onto a 9×13 pan ( my recipe shown here is doubled so i used a regular sized cookie sheet… we eat a lot of this stuff) and pat down with your fingers. The easiest was to do this is run your hands under cold water and pat down.
Then bake in 300 degree oven for 25-30 min and remove. These must cool for at least 2 hours for them to harden and not crumble on you when you cut them up.
I have also added nutritional yeast to these which was surprisingly amazing and if I had had some on hand this time around I would have totally added it. I also add hemp seeds and chia seeds sometimes for extra crunch and health benefits!
These are so yummy, my whole family loves them. I love having a snack for my kids and husband and I know each and every ingredient that went into them. No added preservatives here! Plus they are super easy to make, which is always a must for me!
