I have another one pot wonder for you all today and this one was so easy and super delicious!
BBQ Chicken and Bacon Pasta:
The trick to this one is cooking your chicken in 2 cups of chicken stock ( in the same pot of course) and boiling till cooked through, about 20-30 min depending on your chicken.
Remove the chicken and shred
In the same pot you cooked your chicken in add
3 cups of pasta
1/2 cup frozen peas
1 can of diced tomatoes and their juices
5-6 slices of bacon ( I used the pre-cooked kind from Costco)
1/2 cup shredded cheddar cheese
1 white onion
2 cloves of garlic
1/4 cup of BBq Sauce
1/4 tsp pepper
1/2 tsp salt
pinch of red pepper flakes
Now add 2 cups of chicken stock and 1/2 cup of cream to your pot and stir all together. Next bring everything to a boil and set to simmer for 13-15 min, stirring occasionally.
I added another 1/2 cup cheddar once it was all cooked and sprinkled with Parsley as well!
Super quick, easy and delicious!
