We love cookies around here!
When my mother in law was up visiting she decided to make these healthy chocolate chip cookies with the girls, and we all fell in love! These are sooooo good and good for you. With no flour and hardly any sugar these are perfect for any family. I called these Chocolate chip spice cookies because they almost taste more like Snickerdoodle cookies but with chocolate chips…. oh my word so good!
Gluten Free Chocolate Chip Spice Cookies:
2 tsp vanilla
1 large egg
4 tbsp dark brown sugar ( or coconut sugar)
1/2 cup coconut oil
1.5 cups of oat flour ( regular oats blended, measure AFTER the oats are made into flour)
1 tsp baking soda
1 tsp cinnamon
pinch of salt
1/2 cup of chocolate chips ( or 1/4 cup chocolate and 1/4 white chocolate chips as we used)
Mix your wet ingredients and dry ingredients separately then combine them together. Fold in the chocolate chips and let the dough chill for at least 1 hour. Preheat the oven to 350 degrees F. Using a cookie scoop, scoop out the dough ( packed well into the scoop so they do not crumble) and place on a parchment lined baking tray. Top with a few more chocolate chips and optional sprinkle of sea salt. Bake cookies for 8-10 min. Let them cool completly before serving.
