There is nothing better then pepperoni pizza in my books, especially when its a cold blustery evening, with snow blowing in every direction and no promise of spring in site….. if this isn’t your life in March then this recipe is also great with a cold drink on a balmy spring day lol but here in Northern Alberta the reality is March means the worst is yet to come!
As I have mentioned before I have been trying to clean up my diet lately and my sister-in-law Heidi found this amazing recipe for spaghetti squash pizza, and it has been on repeat around our house since Christmas! No it does not taste exactly like pizza, ha, but it has lots of the same comforting flavours and makes you feel like your cheating on your healthy eating plan!
To help me lose a few extra pounds I put on over the last couple years I have been limiting the starchy carbs in my diet to 50-100 grams per day and instead loading up on protein and healthy fats! I also have cut out most things with processed sugar, but still use some coconut sugar in baking ( but I limit my intake of that as well). I love the energy I have and it’s been great for weight-loss as well!
Anyways onto this delicious recipe….
Start by cutting your spaghetti squash lengthwise and drizzle on some avocado oil ( or oil of choice) and sprinkle with sea salt and pepper
Meanwhile bake some Italian sausage in the oven. I love this cooking method because it keeps my entire stove top from being covered in grease, yuck I hate that. So bake the sausages in the oven. I turn my oven on to broil and place the baking sheet in the middle of the oven. Bake for 10 min, then turn the sausages and bake for another 10.
Remove and place in a high powered blender to get ground sausage
Now set your oven to 425 degrees and start baking your spaghetti squash. Cook for 45min to an hour.
Place 3 jars of pizza sauce in a saucepan and dump your ground sausage on top. Sprinkle with rosemary and basil and simmer on stove top for 30 min
Once your spaghetti squash is cooked, take it out of the oven and fluff the “strings” up with a fork. Then ladle in your meat sauce.
and top with mozzarella cheese
Place back in the oven so cheese melts ( to brown the top you can broil it for a few min.)
Oh my word YUM. Its so good you guys! I also usually top the meat mixture with pepperoni slices before the cheese but of course I ran out before I took these photos…. but this really takes the “pizza” over the top!
