There is nothing better then a cold dreary day spent in the kitchen. I wanted to share a new spin on my flourless chocolate chip peanut butter cookies. These ones taste like fall with the addition of molasses and are the perfect amount of salty and sweet! They are somewhat on the healthier side and bonus they do not contain any gluten!!
To make these cookies you will need:
1 cup of natural peanut butter ( I get mine from Costco)
1 1/2 cups of coconut sugar ( or regular sugar)
2 tsp of molasses
1 tsp of baking soda
6 strips of cooked and crumbled bacon
1/2 cup of chopped salted peanuts
pinch of sea salt for tops of cookies
Preheat your oven to 350 degree . Mix your peanut butter, sugar and molasses together in a stand mixer for 3 min. Add in your baking soda & egg and continue to mix until combined. Toss in your crumbled bacon and chopped peanuts and mix with a spoon. Use parchment paper on your cookie sheets and roll the cookies into balls and place on cookie sheet. If the dough is to dry add in a dribble of water at a time until it starts to come together when you stir it. Use a fork to criss cross the top of the cookies, and sprinkle with a tiny amount of sea salt for extra salty flavour! Bake at 350 for 10 min, let cool completely. These will be crumbly and chewy, and possibly your new favourite cookie ever!!
