I made some delicious vegetarian ( and gluten free) soft tacos for lunch today and they were so good I made them again for dinner ha. They were super easy too! I used sour cream as a topping for lunch and loved it and then for dinner I added some left over coleslaw which was also amazing. For the coleslaw I used bagged cabbage mix, 1/2 cup mayo and 1 tbsp of sugar and 2 tbsp of vinegar to make the dressing. I just tossed it all together and it really is so tasty as well as simple.
For the tacos here is what you will need:
Corn or flour tortillas ( I used corn, yum)
cooked sweet potato diced
1 diced onion
1-2 tsp of garlic powder
salt and pepper to taste
In a sauce pan sauce your onions in butter or coconut oil until soft and transparent. Add in your already cooked sweet potato and garlic salt, salt and pepper to taste. As that heats add a can of refried beans either to the mixture or in a separate saucepan.
To assemble, I just layered the sweet potatoes then refried beans and either sour cream or coleslaw. If I had some cilantro on hand I was have added that for sure!
